Dehydrating foods reduces the moisture in them to levels that inhibit the microbial growth that causes them to rot. Pre-treating some foods before drying preserves their flavor, color, and nutrients; prevents microbial contamination; and prolongs their shelf life. Dehydration reduces weight—an important consideration when shipping—and eliminates the need for refrigeration, making it easier to pre-mix retail products. This article focuses on commercial-scale food dehydration and equipment. It also outlines solar dehydration, a low-cost method for some small-scale operations. |
