| Responsibilities |
1) Ensure company’s products are safe, consistent and wholesome 2) Lead the development of new products successfully 3) Oversee and manage relationships with contacts within the plant corporate and outside the company 4) Test each batch of finished product prior to packaging for presence of micro-organisms 5) Sample product (randomly) for presence of micro-organisms after packaging 6) Conduct environmental (air and surface) testing for microbe contamination periodically 7) Conduct random chemical analysis of product to ensure proper pH, fat, moisture and salt content 8) Investigate to determine source(s) of microbe contamination 9) Advise Sanitation function on corrective and preventive sanitation procedures 10) Review testing processes and results for that nutritional testing performed by the lab outside 11) Conduct sanitation audits periodically and advise staff on sanitation issues 12) Test to establish nutritional values for all company products 13) Conduct test packaging to verify moisture and vapor transmission rates (MVTR) are within acceptable standards 14) Troubleshoot as company’s product fail shelf life standards 15) Develop new product concepts, recipes, production and packaging processes 16) Conduct shelf life testing on new products and ensure product meet standards |
| Requirements |
1) BS/BA in Microbiology, Biology, Chemistry/Meat Science 2) 4 – 7 years of experience in meat product research and development capacity 3) Strong understanding of food production sanitation issues and methods 4) Knowledge of interactions in chemistry, microbiology, production ending in commercially successful products 5) Strong lab management and testing skills |
